Processing Details for Your Pork Share

Once you reserve your pork share, your hog will be custom processed to your specifications. You can choose how you’d like your pork cut, from specific cuts for roasts, ribs, sausages, or bacon. The butcher will process and package your pork based on your preferences. Orders must be submitted by October 2 for custom cutting. Orders placed after that will be cut with the standard cut list. 

Processing Costs

  • Slaughter (up to 250# HCW): $70 per head
  • Oversized Pigs (over 250# HCW): $0.12/lb over
  • Processing & Paper Wrap: $0.70/lb (on hanging weight)
  • Processing & Vacuum Seal: $0.90/lb (on hanging weight)
  • Curing & Smoking Bacon/Ham: $1.50/lb (based on the weight of the product being smoked)

What is Hanging Weight?

The hanging weight refers to the weight of the pig after it has been harvested and cleaned but before it has been processed into cuts of meat. Typically, the hanging weight is about 70-75% of the live weight.

For a half hog, the average hanging weight is about 110 to 130 pounds. Please note that the final weight of the meat you receive will be slightly less after processing.

  • Bacon: 8-10 pounds
  • Ham: 1-2 hams (or cut into ham steaks, around 8-10 pounds)
  • Ground Pork or Sausage: 10-15 pounds (bulk, seasoned to your preference)
  • Ribs: 1 rack
  • Shoulder Roasts (Boston Butt): 2-3 roasts (around 8-12 pounds)
  • Picnic Roasts: 1-2 (around 8 pounds)
  • Pork Loin: 4-5 pounds (can be left as roasts or cut into chops)
  • Pork Belly: 6-8 pounds
  • Spare Ribs: 1-2 racks
  • Hocks: 2 (great for soups and stews)

  1. Secure your pork by paying the deposit: Be sure to do this before the harvest date on October 2.
  2. Choose Your Cuts: Once your deposit is received, Sarah will reach out to you and you’ll have the opportunity to choose how your pork is processed. This means you get to decide on the thickness of your chops, the types of sausages, and even the smoking of your bacon and ham!
  3. Processing: Your pork will be custom-cut and packaged to your specifications by a local processor. You’ll be notified when your order is ready for pick-up.

Absolutely! You can work with the processor to choose your preferred cuts, from chops and roasts to sausages and bacon. You can also decide if you’d like your bacon and ham cured and smoked.

When will the pork be ready?

Your pork share will be ready for pick-up approximately 2-3 weeks after the harvest date on October 2. We’ll notify you as soon as your pork is ready.
